Ammonites are an extinct group of marine animals called cephalopods (related to the modern day nautilus) dating back 66 million. years and longer. They disappeared roughly at the same time as dinosaurs, so we can only find them as fossils nowadays.
The fossil's rainbow finish of color is the result of nacre (aka mother of pearl), the substance that made up the animal's shell, becoming fossilized and turning into a mineral known as aragonite.
